In this dish in particular you will enjoy the flavour of the terroir which, when mixed with the taste of the cuttlefish, makes the palate appreciate both the taste of the vegetables and the saline flavour, the two flavours are softened give way to the explosion of flavour that the red shrimp will give us with the juices from its head.

We curdle the red shrimp in the oven peeled, but with whole head to keep all its juices and not lose its exquisite flavour.
