A typical Mediterranean dish typical of fishermen who used to cook it on their boats during their hard days of work. They used to prepare it by making a rich stock based on rock fish, normally fish with little meat and a lot of bones, which provided a lot of flavour to the broth with which they cooked the rice, previously frying it with the typical salmorreta made with chopped peppers, tomato and garlic. Once cooked, it was served with a mortar and pestle of freshly made aioli.
In the Alicante area we have another similar paella with peeled prawns, fish, cuttlefish or chopped squid, called “del señorito” because all these pieces are already peeled and cut in the right proportions to eat it directly without having to peel or cut them yourself.

For us the secret of making a good paella is on the one hand that the grain is cooked evenly and constantly, so we use larger paella pans than they should be, depending on the portions to be served, so that the grain is fine without caking with enough space for cooking and on the other hand and no less important is the broth with which the rice is going to be cooked.
If the base with which the rice is going to be cooked is not prepared with the right fish and ingredients and in the exact proportions, the rice will not be good or tasty. That is why we make our broth every 2 days and we make them with the best raw materials.
