Normally it is a dish that is usually made with white fish, but it can also be made with octopus, calamary, prawns, mussels, etc., hence its great versatility.
We present a classic ceviche, elegant and easy to eat ceviche for all palates.
To prepare it, we use a bowl in wich we add the diced sea bass, the finely julienned red onion, the chili pepper and the chopped fresh coriander.
Salt to taste and macerate it with the lime juice, we can mix it with lemon juice if we like it less acidic.
We usually introduce an ice cube to maintain the freshness of the food and reduce the acidity while the fish is macerating.
Once the fish has changed from its pinkish colour to white, we are ready to plate it. It will take about 10 minutes depending on the thickness and the point of maceration we wish to give the fish or the product in question.
Place the mixture in the center of a deep dish, sprinkle with the juice in which it has been previously macerated it during the process, and finish plating with a drizzle of extra virgin olive oil of the picual variety and sprinkle with chopped puffed corn.
It is advisable to add the chopped coriander at the end and with a minimum amount, as it is very aromatic and if we go over the optimum amount, it will overpower the whole flavour of the dish.
