You will taste the meat in its purest, most natural and original state, achieving a very subtle and exquisite flavour at the same time, accompanied by a juiciness and texture of the meat that cannot be achieved with any other form or method of cooking. We place the cleaned sirloin steak in a clay tray and cut it into a piece of approximately 400 grams for at least two people, cover it completely with salt and moisten it. We bake it for about 18 minutes at 200 degrees Celsius, achieving that perfect seal that will make the meat cook in its own juices, preventing them from being lost, thus obtaining that perfect cooking point that leaves the meat juicy and tender as butter, with an exquisite flavour.
Once the piece of sirloin has been cleaned of salt, the meat is left to rest for about 5 minutes so that it releases its juices. Once it has rested, it is carved into thin fillets, leaving the meat slightly undercooked on the inside, and served on hot plates so that it can be finished cooking according to the diner’s particular taste.
A good sirloin of “Retinta” or “Morucha” veal, the varieties we use, does not need much more to leave an authentic explosion of flavour in the mouth, but if we accompany it with a rich garnish of vegetables or seasonal salad and baby potatoes seasoned with fresh herbs, it is the ideal way to round off this magnificent delicacy.
