It is one of the best cooking techniques with which we will obtain the authentic flavour of the fish, allowing us to taste and feel all its nuances. There is therefore no need to enhance the flavours with other condiments or sauces to disguise the authenticity that we achieve with this technique.
As it could not be otherwise being located in this beautiful corner of the Mediterranean Sea, in Torrevieja, the fish cooked in sea salt is one of the star dishes of our valued and beloved customers, being the fish we use most often the sea bream, sea bass and the croaker.
For its preparation we choose pieces that have to weigh a minimum of between 800 gr. and 1 kg. -(ideal for 2 people). We fill the oven tray with a layer of coarse salt, then place the fish in it and cover it with more coarse salt, so that it is buried as if in a sarcophagus, completely covered and sealed. It is important that the layer of salt is slightly moistened so that when it is placed in the oven it seals well and leaves a compact, well-sealed shell, which will allow the fish to cook perfectly using its own juices, thus preventing them from escaping or interrupting the internal cooking of the fish in optimum conditions.
Previously we will heat the oven until it reaches 180 degrees, once this has been reached, place the tray with the fish covered and sealed with salt as mentioned above and place it in the oven, calculating the thickness and weight of the fish, at a rate of around 36 minutes per kilo of fish.
Once the necessary cooking time has elapsed in the oven, we break the shell that has been created and uncover the fish. If it is ready, you will see that the skin comes off easily from the body of the fish, revealing the absolutely delicious, meaty and juicy fish loins. If at this point we see that the skin is stuck to the flesh of the fish, cannot be easily removed or we see that some parts of the fish are raw, it is because it still needs more time in the oven, so we must cover it and seal it again with coarse salt and place it in the oven for as long as we consider necessary to finish cooking it.
Finally, to taste and enjoy it, we accompany it with a delicious side dish of steamed vegetables and potatoes together with a good extra virgin olive oil -EVOO- picual variety that will delight everyone who tastes it.
