There are dishes that we can share as well as enjoy as a unique dish and even better if we accompany them with a good wine.
Salmon is an excellent source of high quality protein, vitamins and minerals, including potassium, selenium and vitamin B12, and its omega-3 fatty acid content is what makes it most attractive. The most beneficial omega-3 fats are those found in oily or blue fish such as tuna, cod, anchovies and salmon, which help to keep the brain, heart and joints healthy, as well as contributing to general well-being.
In our case, as always, we start by choosing the best product for each recipe. With this dish we combine our know-how, tradition and innovation based on vacuum cooking techniques and methods for salting and marinating to create this delicious dish so appreciated by our customers and friends.

For the preparation of our recipe we use salmon weighing more than 6 kg, from which we clean the loins and keep the fillets clean, with no bones left over.
Some people use a 50/50 mixture of salt and sugar to marinate the salmon, in our case we “season” the salmon with the sugar and place it on a layer of coarse sea salt with the skin in contact with the salt. Then we cover the flesh side of the fish with fresh dill, lemon and orange slices on top and another layer of coarse sea salt.
We reserve the fish in the chamber for a minimum of 20 hours, where we choose the desired texture and curing time. After this curing period, we rinse to remove all traces of salt and stop cooking the product. We dry it meticulously to prevent the humidity from accelerating the fish’s maturation process.
To keep it in optimum conditions, it is best to vacuum-pack it or, failing that, in an airtight container covered in vegetable oil, making sure that nothing is left out so that it does not lose its properties or dry out excessively.

Finally, to enjoy this exquisite snack we round it off by cutting and presenting the salmon in cubes, accompanying it with onion sprouts, black sesame seeds, trout roe and a mixture of soya and sesame oil to balance all these flavours in the mouth, which will undoubtedly be enjoyed by everyone who tries it.
